Single Girl Servings

This is where I will post my single girl versions of recipes to hopefully save some money, cut down on wasted ingredients, and keep the leftovers to a minimum!

Pound Cake: Take 1.

 I decided to tackle a cake I am very familiar with and has basic flavors for my first attempt at minimal cake baking: pound cake! I purchased the cutest darn cake pans you have ever seen as well as mini loaf pans. These are obviously necessary for single girl baking so I suggest you invest. (They were $6 for 3, so $12 investment, totally worth it!)

The original recipe tells you to just layer everything (in order) in the bowl of your stand mixer and mix, pour, bake which makes this pound cake incredibly easy to make. I did the same thing with this smaller version.

Into the bowl, in this order, goes:
1 c. flour
3/4 c. sugar
1/2 cup butter, softened
1/4 c. milk
2 small eggs
1/2 t. vanilla

Mix until smooth, pour into greased  pans, bake at 325 for 25- 27 minutes.

I held it in my hand to show you their size. 
I was thrilled with the outcome! The cakes were delicious although they had a custard taste because the egg ratio was a little heavy. I am going to make these again with one large egg and see what happens. The best part was each little cake is essentially one large piece of cake so instead of an entire pound cake I had three pieces sitting on my counter. I had one with strawberries one night and the second I just had plain. I shared the last one with my coworkers to get some feedback. They all thought it was delicious, too!
